Takibi is going through a refresh and relaunch following our unfortunate closure due to a chimney fire earlier this year. In addition to repairing and upgrading our fire prevention system, we’ve used this time to review the restaurant from the ground up. We have updated our concept from “mountain izakaya” to “contemporary Japanese inspired by cooking with and gathering by the fire,” showcasing Takibi’s and Snow Peak’s Japanese roots while re-establishing our connection to the outdoors & fire-based cooking. In support of this reimagined concept and menu, we have onboarded partners ranging from an acclaimed master chef (recently included on a ‘Top 150 in the World’ publication) to a renowned restaurant producer (100+ restaurants in Japan) to a Michelin starred ramen partner. Our goal is to deliver an expanded menu of unique offerings — from Japanese staples to ramen — while inspiring memorable, connective experiences for our guests centered around fire and Snow Peak’s outdoor values.

The successful Takibi General Manager is an enthusiastic and entrepreneurial leader who oversees all business and hospitality operations to build and maintain a profitable restaurant, supervises the restaurant team, cultivates an inclusive and welcoming environment, leads strategic objectives, and assures day-to-day operational excellence and positive guest experiences. To succeed in this role, the Takibi General Manager must maintain a profitable restaurant in line with the organization’s strategic objectives.

This position is a full-time salaried, exempt position reporting to the CEO of Snow Peak Hospitality. The compensation for this position ranges from $65,000-$85,000 per year, depending on experience. This position is based in Portland, Oregon, and requires availability on evenings, weekends, and holidays. The schedule for the position will be 5 days per week and scheduled days will vary.

WHAT YOU WILL DO

Manage Restaurant Operations

  • Establish and maintain hospitality excellence in all areas of the restaurant, taking appropriate action to problem solve in the moment so that Takibi consistently exceeds guest expectations and inspires customers to return often
  • Lead meetings with all BOH and FOH management staff on a regular basis
  • Lead meetings/trainings with full restaurant staff
  • Maintain a professional restaurant image, including restaurant cleanliness, proper uniforms, and appearance standards
  • Oversee safety, security, and health standards for all areas of restaurant operations; establish and enforce sanitation standards and procedures; oversee adherence to health and legal regulations; maintain security procedures and systems
  • Open and close the restaurant, completing tasks including reconciling bank statements, conducting pre-shifts meetings, managing the service floor, touching tables, running food, overseeing staff, writing daily recaps, and performing end of day reporting
  • Manage R&M of restaurant facilities and equipment
  • Execute monthly inventory accurately and efficiently and control COGS, labor, and compensation in alignment with budget
  • Manage event programming; collaborate with the Brand team and 3rd party agencies on PR, communications, social media, etc

Supervise Team

  • Establish a welcoming, inclusive, and equitable workplace and hold all team members accountable for contributing to and preserving it
  • Collaborate with Human Resources to recruit, select, and hire an exceptional team
  • Train and coach team members on points of service, hospitality and product knowledge
  • Develop and oversee staffing and scheduling
  • Develop and maintain staffing and labor reports for payroll and other internal processes
  • Communicate transparently and resolve conflicts to foster a successful team that encourages the appreciation of diverse perspectives as well as cohesiveness
  • Serve as primary point of contact for restaurant staff comments, questions, and concerns; document and resolve or escalate as appropriate
  • Maintain working knowledge of all applicable labor laws and regulations and ensure that all management procedures ensure compliance with best practices
  • Encourage employee career pathing by coaching, mentoring, and providing effective performance feedback; inspire a culture of learning and development

Lead Department Strategy

  • Plan and implement strategic objectives that fulfill the mission and goals of the restaurant efficiently and effectively in collaboration with leadership team
  • Evaluate, improve, and report the efficiency of business processes and procedures to enhance profitability and the experiences of team members and customers
  • Establish, maintain, and present reports to stakeholders
  • Engage in effective feedback systems to monitor and communicate operational and strategic alignment with interdepartmental objectives
  • Manage departmental budget and profitability metrics

Performs other related duties and projects as assigned

MUST HAVE

Education/Experience

  • High school diploma or equivalent experience
  • 7 years of experience working in a restaurant environment
  • 5+ years management experience

Skills

  • Extensive knowledge of and passion for Japanese food and beverage
  • Proficient understanding of Microsoft Office Suite
  • Proficient knowledge of compliance related laws and regulations
  • Proficient understanding of training in food safety
  • Proficient writing and documentation experience with demonstrated success in the use of written personnel performance management tools
  • Proficient expertise in Excel and performance analysis and reporting
  • Advanced understanding of the financial and business acumen to drive profitability

Abilities

  • Ability to mentor, coach and develop other leaders and build high functioning teams
  • Ability to act with integrity, professionalism, and confidentiality
  • Ability to operate POS (point of sale) systems, back-of-house systems and restaurant operating systems

Physical Requirements

  • Lift and move 50 pounds regularly
  • Stand and walk for an 8-10 hour shift, including moving safely through all areas of the restaurant, which may include stairs, uneven and slick surfaces
  • Ability to bear exposure to hot and cold environments

NICE TO HAVE

  • Professional working fluency in Japanese (preferred)
  • Experience with Japanese language and culture
  • Experience in the outdoor, retail, or apparel industries
